Mezcal

Mezcal is a distilled alcoholic beverage made from any type of agave. The word mezcal comes from Nahuatl mexcalli which means "oven-cooked agave", from metl and ixcalli . Agaves or magueys are found mainly in many parts of Mexico and south to the equator, though most mezcal is made in Oaxaca. It can also be made in Durango, Guanajuato, Guerrero, San Luis Potosí, Tamaulipas, Zacatecas, Michoacan, and the recently approved Puebla. A saying attributed to Oaxaca regarding the drink is: "Para todo mal, mezcal, y para todo bien, también." ("For everything bad, mezcal, and for everything good, as well."). Whether distilled drinks were produced in Mexico before the Spanish Conquest is unknown. The Spaniards were introduced to native fermented drinks such as pulque, made from the maguey plant. Soon, the conquistadors began experimenting with the agave plant to find a way to make a distillable fermented mash. The result was mezcal. Today, mezcal is still made from the heart of the agave plant, called the piña, in much the same way as it was 200 years ago. In Mexico, mezcal is generally consumed straight and has a strong smoky flavor. Despite the similar name, mezcal does not contain mescaline or other psychedelic substances.

Tequila

Tequila is a distilled beverage made from the blue agave plant, primarily in the area surrounding the city of Tequila northwest of Guadalajara, and in the Jaliscan Highlands (Los Altos de Jalisco) of the central western Mexican state of Jalisco. The red volcanic soils in the region of Tequila are well suited to growing the blue agave, and more than 300 million of the plants are harvested there each year. Agave grows differently depending on the region. Blue agaves grown in the highlands Los Altos region are larger and sweeter in aroma and taste. Agaves harvested in the lowlands have a more herbaceous fragrance and flavor. Due to its historical and cultural importance, the region near Tequila was declared a UNESCO World Heritage Site in 2006, the Agave Landscape and Ancient Industrial Facilities of Tequila. Mexican laws state that tequila can only be produced in the state of Jalisco and limited municipalities in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas. Tequila is recognized as a Mexican designation of origin product in more than 40 countries. through bilateral agreements with individual countries such as Japan and Israel, It must contain at least 40-percent alcohol (80 U.S. proof) to be sold in the United Statesand Canada.

Mexican cuisine

Mexican cuisine began about 9000 years ago, when agricultural communities such as the Maya formed, domesticating maize, creating the standard process of maize nixtamalization, and establishing their foodways. Successive waves of other Mesoamerican groups brought with them their own cooking methods. These included the Olmec, Teotihuacanos, Toltec, Huastec, Zapotec, Mixtec, Otomi, Purépecha, Totonac, Mazatec, and Mazahua. The Mexica establishment of the Aztec Empire created a multi-ethnic society where many different foodways became infused. The staples are native foods, such as corn (maize), beans, squash, amaranth, chia, avocados, tomatoes, tomatillos, cacao, vanilla, agave, turkey, spirulina, sweet potato, cactus, and chili pepper. After the Spanish conquest of the Aztec Empire in the 16th century and the subsequent conquest of the Maya area, Europeans introduced a number of other foods, the most important of which were meats from domesticated animals (beef, pork, chicken, goat, and sheep), dairy products (especially cheese and milk), and rice. While the Spanish initially tried to impose their own diet on the country, this was not possible. Asian and African influences were also introduced into the indigenous cuisine during this era as a result of African slavery in New Spain and the Manila-Acapulco Galleons. Over the centuries, this resulted in regional cuisines based on local conditions, such as those in Oaxaca, Veracruz and the Yucatán Peninsula. Mexican cuisine is an important aspect of the culture, social structure and popular traditions of Mexico. The most important example of this connection is the use of mole for special occasions and holidays, particularly in the South and Central regions of the country. For this reason and others, traditional Mexican cuisine was inscribed in 2010 on the Representative List of the Intangible Cultural Heritage of Humanity by UNESCO.

Cooking or cookery is the art, technology, science and craft of preparing food for consumption. Cooking techniques and ingredients vary widely across the world, from grilling food over an open fire to using electric stoves, to baking in various types of ovens, reflecting unique environmental, economic, and cultural traditions and trends. Types of cooking also depend on the skill levels and training of cooks. Cooking is done both by people in their own dwellings and by professional cooks and chefs in restaurants and other food establishments. Cooking can also occur through chemical reactions without the presence of heat, such as in ceviche, a traditional South American dish where fish is cooked with the acids in lemon or lime juice. Preparing food with heat or fire is an activity unique to humans. It may have started around 2 million years ago, though archaeological evidence for it reaches no more than 1 million years ago. The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served.

Boxing

Boxing is a combat sport in which two people, usually wearing protective gloves, throw punches at each other for a predetermined amount of time in a boxing ring. Amateur boxing is both an Olympic and Commonwealth Games sport and is a standard fixture in most international games—it also has its own World Championships. Boxing is overseen by a referee over a series of one- to three-minute intervals called rounds. A winner can be resolved before the completion of the rounds when a referee deems an opponent incapable of continuing, disqualification of an opponent, or resignation of an opponent. When the fight reaches the end of its final round with both opponents still standing, the judges' scorecards determine the victor. In the event that both fighters gain equal scores from the judges, professional bouts are considered a draw. In Olympic boxing, because a winner must be declared, judges award the contest to one fighter on technical criteria. While humans have fought in hand-to-hand combat since the dawn of human history, the earliest evidence of fist-fighting sporting contests date back to the ancient Near East in the 3rd and 2nd millennia BC. The earliest evidence of boxing rules date back to Ancient Greece, where boxing was established as an Olympic game in 688 BC. Boxing evolved from 16th- and 18th-century prizefights, largely in Great Britain, to the forerunner of modern boxing in the mid-19th century with the 1867 introduction of the Marquess of Queensberry Rules.
